SOYA PORK STEW
Belly pork 400 grams
Onion 1/2 bulb
Garlic 2 cloves
Ginger 6 slices
Potatoes 3 pieces
Black pepper corns 1/2 tsp
Light soya sauce 2 tbsp
Oyster sauce 1 tbsp
Dark soya sauce 1 1/2 tbsp
Sugar 1 tbsp
Water 1 1/2 dl
Star anises 2 pieces
Cloves 6 pieces
Cut pork into 3 x 5 cm pieces. Slice onion, garlic and ginger. Cut potato into wedges and crush black pepper corns roughly.
Heat oil in wok, fry onion, garlic and ginger for 1 minute.
Add in pork, black pepper, all the sauces and sugar, continue to fry for 3 minutes.
Add water, star anise and cloves, bring to boil then simmer until pork is tender, between 40 minutes to 1 1/2 hours (if you have the patience).
Add in potatoes and cook for about 15-20 minutes before serving.
NOTE:This recipe is taken from my cookbook, ‘Blame It From Granny’. The longer you simmer the better, the fat and the skin simply melt in the mouth.
