Sambal Ikan Bilis

Rather hard to take a nice picture on Sambal Ikan Bilis, no matter how you garnish will still look that way but who cares as long it taste fantastic. What say you?

SAMBAL IKAN BILIS (Sambal Asian Anchovies)

Ikan bilis 100 grams
Tamarind pulp 2 tbsp
Salt 1/2 tsp
Sugar 1 tsp
Oil 2 tbsp

PASTE:
Galangal 1 cm
Tumeric powder 1 tsp
Candle nuts 5 pieces
Dried chillies 10 to 13 pieces
Onion 1 bulb
Garlic 3 cloves
Belachan (prawn paste) 1 tsp

Grind all the ingredients for paste, heat oil in wok and fry ground ingredients until oil surface, stirring all the time. Add ikan bilis and fry for 2 minutes. Mix tamarind with 1 dl of water, take out the seeds if any then add tamarind mixture. Simmer for 15 to 20 minutes on low heat until ikan bilis become soft. Add in salt and sugar to taste. Add more water if needed.

NOTE: Goes well with Nasi Lemak with a few slices of cucumber and a hard boiled egg.
